Equipment

  • oven
  • bowl

Ingredients

  • 2 tablespoons extra-virgin olive oil or melted unsalted butter: This is your base for flavor.
  • 1 teaspoon lemon zest: This brightens everything up.
  • 5 cloves garlic smashed or coarsely minced: Essential for a flavor punch.
  • A few sprigs of fresh rosemary: Fresh herbs bring a wonderful aroma.
  • 3 whole fresh artichokes trimmed: The star of the show.
  • 1/2 teaspoon red pepper flakes: A subtle kick draws you in.
  • Coarse sea salt and freshly ground black pepper to taste: Simple seasonings go a long way.
  • Juice of 2 large lemons: Freshly squeezed is best!

Instructions

Step 1: Prepare Your Artichokes

  • Start by rinsing the artichokes under cold water. This will remove any dirt and debris. Trim the stems so they can stand upright, and remove the tough outer leaves. If the petals feel harsh, peel back a few layers. This will make them more approachable.

Step 2: Season the Artichokes

  • In a small bowl, combine the olive oil (or melted butter), garlic, lemon zest, and salt. The aroma of this mixture will have you dreaming of your meal! Place the cleaned artichokes in a large bowl and pour the oil mixture over them. Ensure every leaf is coated—this is key!

Step 3: Add the Herbs

  • Take your fresh rosemary and tuck the sprigs into the center of each artichoke. The slow roasting will release their flavors, giving your dish a fragrant quality.

Step 4: Roast the Artichokes

  • Preheat your oven to 425°F (220°C). Place your artichokes upright in a roasting pan and add 1.5 cups of water to the bottom of the pan.
  • This steam will help them cook thoroughly without drying out. Cover the pan with aluminum foil for the first 20 minutes. Then, remove the foil and continue roasting for an additional 25-35 minutes until tender.

Step 5: Serve and Enjoy

  • Once cooked, remove the artichokes from the oven. Let them cool for a few minutes. Serve warm, drizzled with lemon juice and a sprinkle of red pepper flakes for that extra zing.

Notes

  • Choose Fresh Artichokes: Look for artichokes with tight leaves and a vibrant green color.
  • Don’t Skip the Steaming: The water adds moisture and keeps the artichokes from drying out.
  • Experiment with Spices: Feel free to add herbs like thyme or oregano for extra flavor.
  • Dunk 'Em!: Serve with a dipping sauce to enhance the flavor and add fun.
  • Storage Tips: If you have leftovers, store them in the fridge in an airtight container for up to 3 days.
