Equipment

  • Large pot/Dutch oven

Ingredients

  • 1 cup white rice
  • 2 tablespoons Cajun seasoning divided
  • 2 cups chicken broth
  • ½ onion finely diced
  • 2 cloves garlic minced
  • 3 tablespoons olive oil divided
  • pounds boneless skinless chicken breast, cut into bite-size pieces
  • 1 pound Andouille sausage sliced into rounds
  • 2 ribs celery diced
  • 2 bell peppers any color, chopped
  • 1 14.5-ounce can crushed tomatoes
  • 1 teaspoon dried oregano
  • ½ teaspoon smoked paprika optional, for a deeper smoky flavor
  • ½ teaspoon hot sauce optional, for a spicy kick

Instructions

Step 1: Prepare the Ingredients

  • Begin by gathering all your ingredients. Chop your vegetables, cut the chicken, and slice the sausage. Having everything ready to go makes cooking seamless.

Step 2: Sauté the Aromatics

  • In a large pot or Dutch oven, heat 2 tablespoons of olive oil over medium heat. Add diced onion and cook for about 3-4 minutes until translucent. Toss in the minced garlic and cook for another minute until fragrant. The smell alone will have you excited.

Step 3: Brown the Chicken and Sausage

  • Next, add the chicken pieces and Andouille sausage to the pot. Cook for about 5-7 minutes. You’ll want the chicken to brown slightly for added flavor. Stir in 1 tablespoon of Cajun seasoning to coat the meat.

Step 4: Add Vegetables and Rice

  • Stir in the diced celery and chopped bell peppers. Cook for another 3-4 minutes until the vegetables begin to soften. Add in the uncooked rice and stir to combine.

Step 5: Incorporate the Liquids

  • Pour in the chicken broth and crushed tomatoes. This is your time to shine. Stir everything together and bring the mixture to a simmer. Sprinkle the remaining Cajun seasoning, oregano, and smoked paprika. If using, add the hot sauce. Taste and adjust seasoning as needed.

Step 6: Cook the Jambalaya

  • Cover the pot and reduce the heat. Allow it to simmer on low for about 25-30 minutes. You want the rice to soak in all that delicious flavor and become tender. Stir occasionally to prevent sticking.

Step 7: Fluff and Serve

  • Once the rice is cooked, turn off the heat and let the pot rest for 5 minutes. Gently fluff the jambalaya with a fork. It’s time to serve your masterpiece!

Notes

Here are some tips to enhance your jambalaya experience:
  • Use fresh spices: Ensure your seasonings are fresh for the best flavor.
  • Let it rest: Allowing the dish to sit after cooking helps flavors meld together.
  • Adjust spice levels: Always taste before serving and adjust the heat as needed.
  • Don’t skip the sausage: It adds essential flavor and texture; skip it at your own risk!
  • Experiment with proteins: Feel free to add shrimp or even veggies to make it vegetarian-friendly.
