Ingredients

  • 6 cups cooked white or brown rice
  • 1 large chopped red bell pepper
  • 2 pound spicy or mild breakfast sausage
  • 2 tablespoon minced garlic
  • 2 small chopped onion
  • 0.5 teaspoon cayenne pepper
  • 2 teaspoon smoked or sweet paprika
  • 1 teaspoon black pepper

  • 29 ounces canned drained black beans

Instructions

  • Begin by cooking your rice according to package instructions and set aside.
  • In a heavy skillet over medium heat, cook the sausage until browned and cooked through.
  • Add in the chopped red bell pepper, minced garlic, chopped onion, cayenne pepper, smoked or sweet paprika, and black pepper. Cook for about 5 minutes until the vegetables are soft.
  • Drain any excess fat from the skillet and add in the cooked rice and drained black beans. Stir well to combine all ingredients.
  • Reduce heat to low and cook for an additional 10-15 minutes, stirring occasionally, to allow flavors to meld together.
  • Once done, remove from heat and let cool for a few minutes before serving.
  • Garnish with chopped green onions and serve as a side dish or as a main course.

Notes

  • Use cooked rice that has cooled down in the refrigerator overnight for a more authentic texture.
  • For extra heat, add more cayenne pepper or hot sauce to taste.
  • For a vegetarian option, you can omit the sausage and add in more vegetables such as diced mushrooms or zucchini.
  • Make sure to drain any excess fat from the skillet before adding in the rice and beans.
