- 6 cups cooked white or brown rice
- 1 large chopped red bell pepper
- 2 pound spicy or mild breakfast sausage
- 2 tablespoon minced garlic
- 2 small chopped onion
- 0.5 teaspoon cayenne pepper
- 2 teaspoon smoked or sweet paprika
- 1 teaspoon black pepper
Dirty Rice And Beans
- 29 ounces canned drained black beans
Begin by cooking your rice according to package instructions and set aside.
In a heavy skillet over medium heat, cook the sausage until browned and cooked through.
Add in the chopped red bell pepper, minced garlic, chopped onion, cayenne pepper, smoked or sweet paprika, and black pepper. Cook for about 5 minutes until the vegetables are soft.
Drain any excess fat from the skillet and add in the cooked rice and drained black beans. Stir well to combine all ingredients.
Reduce heat to low and cook for an additional 10-15 minutes, stirring occasionally, to allow flavors to meld together.
Once done, remove from heat and let cool for a few minutes before serving.
Garnish with chopped green onions and serve as a side dish or as a main course.
- Use cooked rice that has cooled down in the refrigerator overnight for a more authentic texture.
- For extra heat, add more cayenne pepper or hot sauce to taste.
- For a vegetarian option, you can omit the sausage and add in more vegetables such as diced mushrooms or zucchini.
- Make sure to drain any excess fat from the skillet before adding in the rice and beans.
