Equipment

  • Pot
  • Hand Mixer
  • Silicon spatula

Ingredients

  • 1 teaspoon vanilla extract
  • 1 cup heavy cream
  • 8 oz mascarpone cheese room temperature
  • ½ cup powdered sugar
  • 1 cup dark chocolate chips
  • ¼ teaspoon kosher salt
  • 1.5 teaspoon Instant Espresso Powder

Instructions

Step 1:

  • In a microwave-safe bowl, combine the heavy cream, dark chocolate chips, and instant espresso powder. Microwave it on high in 30-second intervals, stirring after each interval until the chocolate is completely melted and the mixture is smooth.

Step 2:

  • Stir in the vanilla extract and salt into the chocolate mixture until well incorporated. Set aside to cool for about 10 minutes.

Step 3:

  • In a separate bowl, whisk the mascarpone cheese until smooth and creamy. Add the powdered sugar and mix until well combined.

Step 4:

  • Gradually add the cooled chocolate mixture to the mascarpone cheese mixture, folding gently until fully incorporated.

Step 5:

  • In another bowl, whip the cold heavy cream until stiff peaks form. Gently fold the whipped cream into the chocolate mascarpone mixture until no streaks remain.

Step 6:

  • Divide the mousse into serving glasses or dishes and refrigerate for at least 2-3 hours, or until set and firm.

Notes

– Ensure that the mascarpone cheese is at room temperature before using it in the recipe. This will make it easier to whisk and incorporate into the mousse.
– Use high-quality dark chocolate chips to achieve the best flavor and smooth texture in the mousse.
– Make sure to cool the chocolate mixture before adding it to the mascarpone cheese. This prevents the cheese from becoming too warm and losing its creamy consistency.
– Whipping the cream until stiff peaks form is crucial for a light and airy mousse. Be patient and avoid over-whipping, as it can lead to a grainy texture.
– For a fancy presentation, garnish the mousse with chocolate shavings, fresh berries, or a dollop of whipped cream before serving.
