Ingredients

  • 4 cups vibrant cherry or grape tomatoes halved for bursts of juicy flavor

  • 3 cups of crumbled feta cheese providing a rich and creamy texture

  • 2 green and 2 red bell peppers chopped for a colorful and crunchy medley
  • 2 cups of rich and briny Kalamata olives pitted and halved to add a tangy Mediterranean touch
  • 1/2 cup of robust red wine vinegar lending a zesty acidity
  • 32 oz of your favorite rotini penne, or fusilli pasta, providing the perfect canvas for flavors to mingle

Instructions

  • Cook the pasta according to package instructions until al dente. Drain and set aside.
  • In a large bowl, combine the cooked pasta, tomatoes, red onions, cucumbers, feta cheese, herbs, garlic, bell peppers and olives.
  • In a separate small bowl, whisk together the red wine vinegar, olive oil, dried oregano, salt and pepper until well combined.
  • Pour the dressing over the pasta mixture and toss to combine.
  • Squeeze fresh lemon juice over the salad before serving and toss again.
