Equipment

  • large pot
  • large bowl

Ingredients

  • 3 cups frozen tortellini approximately 0.75 pounds of delectable pasta pillows filled with savory goodness
  • 2.5 oz grape tomatoes plump and succulent, halved to reveal their vibrant, juicy interiors
  • 1.5 oz Genoa salami expertly sliced into matchstick-sized delights
  • 2 tbsp red onion thinly sliced for a hint of sharpness and color contrast
  • 1 oz sliced black or pearled olives adding a touch of briny richness (about 1/4 cup), or adjust to suit your taste
  • 1/4 cup Wishbone Zesty Robusto Italian dressing a flavorful and robust blend to tie together this symphony of ingredients
  • 1/3 cup mozzarella artfully cut into small, creamy cubes to elevate the cheese experience

Instructions

  • Cook the tortellini according to the package instructions. Drain and rinse with cold water to stop the cooking process.
  • In a large bowl, mix together the cooked tortellini, salami, tomatoes, olives, red onion, and mozzarella.
  • Pour the Italian dressing over the mixture and toss to coat all of the ingredients evenly.
  • Refrigerate for at least 30 minutes before serving to allow the flavors to meld together.
  • Serve chilled as a side dish or add some protein, like grilled chicken, to make it a complete meal.

Notes

• Make sure to cook the tortellini al dente so that it doesn’t become mushy when you refrigerate it.
• If you’re not a fan of black olives, you can substitute them with green olives instead.
• You can use any type of Italian dressing that you like.
• You can add other ingredients to the salad such as red onion, bell peppers, or artichoke hearts.
