  • 4 pounds boneless skinless chicken thigh meat

  • 4 diced Roma tomatoes

  • 4 tablespoons vegetable oil
  • 2 teaspoon brown sugar
  • 1 shredded head iceberg lettuce

For The Secret Sauce

  • 2 tablespoon milk
  • 0.5 cup mayonnaise
  • 2 teaspoon lime juice

Instructions

  • Begin by marinating the chicken in a mixture of lime juice, diced tomatoes, minced garlic, and taco seasoning mix. Let it sit for at least 30 minutes to allow the flavors to develop.
  • Preheat your oven to 375°F (190°C). Place the tortillas on a baking sheet and warm them in the oven for 5 minutes.
  • Heat a pan over medium-high heat and add vegetable oil. Once hot, add the marinated chicken and cook for about 6-7 minutes on each side or until fully cooked.
  • While the chicken is cooking, make the secret sauce by mixing together milk, mayonnaise, and lime juice in a small bowl. Set aside.
  • Once the chicken is cooked, remove it from the pan and let it rest for a few minutes before slicing it into strips.
  • Assemble the tacos by placing a few slices of chicken onto each warmed tortilla. Top with shredded lettuce, crumbled cheese, and a drizzle of the secret sauce.
