- 4 pounds boneless skinless chicken thigh meat

- 4 diced Roma tomatoes

- 2 teaspoon lime juice
Begin by marinating the chicken in a mixture of lime juice, diced tomatoes, minced garlic, and taco seasoning mix. Let it sit for at least 30 minutes to allow the flavors to develop.
