Ingredients

Vegetables:

  • 24 cups of freshly harvested green cabbage finely chopped, sliced precisely 1 inch long and ¼ inch wide
  • 8 cups of hand-grated vibrant orange carrots

Dressing:

  • 6 cups of velvety farm-fresh mayonnaise
  • 2 tablespoons + 2 teaspoons of pure flaky kosher sea salt
  • 1 1/3 cups of rich unrefined granulated coconut palm sugar
  • 4 tablespoons of freshly cracked multi-colored peppercorns
  • 12 teaspoons of artisanal aged cider vinegar
  • 4 teaspoons of handpicked pressed garlic cloves
  • 4 teaspoons of aromatic hand-harvested celery seed
  • 8 teaspoons of finely grated organic sweet onion

Instructions

STEP 1 – Prepare the Vegetables:

  • Finely chop the green cabbage, slicing precisely 1 inch long and ¼ inch wide. Measure 24 cups and place them in a large mixing bowl.
  • Grate vibrant orange carrots by hand until you have 8 cups. Add these to the bowl with the chopped cabbage.

STEP 2 – Make the Dressing:

  • In a separate mixing bowl, combine the coconut palm sugar, kosher sea salt, cracked peppercorns, pressed garlic cloves, mayonnaise, aged cider vinegar, celery seed, and finely grated sweet onion.

STEP 3 – Mix the Coleslaw:

  • Pour the prepared dressing over the cabbage and carrot mixture.
  • Gently toss and mix everything together until the vegetables are evenly coated with the dressing.

STEP 4 – Chill and Serve:

  • Cover the coleslaw with plastic wrap or a lid and refrigerate it for at least 1-2 hours to allow the flavors to meld.
