Equipment

  • Wooden Skewer
  • bowl

Ingredients

  • 4 boneless skinless chicken breasts: Pounded to an even thickness to ensure even cooking.
  • 1 tablespoon extra virgin olive oil or melted unsalted butter: This adds moisture and a hint of flavor.
  • 1/2 teaspoon smoked paprika: For a subtle smoky kick.
  • 1/2 teaspoon garlic powder: A go-to seasoning that never disappoints.
  • 1/4 teaspoon onion powder: This adds a gentle savory depth.
  • 1/2 teaspoon dried Italian seasoning: A classic mix that brings together various herbs.
  • 1 teaspoon coarse kosher salt: Enhances flavor.
  • 1/2 teaspoon freshly ground black pepper: For a slight heat.
  • Optional: Fresh lemon wedges for serving: A squeeze of citrus brightens everything up.

Instructions

Step 1: Prepare the Chicken

  • Start by cutting the chicken breasts into cubes. Aim for roughly 1 to 1.5 inches in size. This will help them cook evenly.

Step 2: Marinade the Chicken

  • Combine olive oil, smoked paprika, garlic powder, onion powder, Italian seasoning, salt, and black pepper in a bowl. Add the chicken cubes to this mixture. Make sure they are evenly coated. Cover and refrigerate for at least 30 minutes or up to 2 hours. The longer you let the chicken sit in the marinade, the more flavorful it becomes.

Step 3: Skewer the Chicken

  • Once marinated, take skewers (wooden or metal) and thread the chicken onto them. If using wooden skewers, soak them in water for about 30 minutes beforehand to prevent burning. Alternate the chicken pieces with your choice of veggies for added color and taste. Bell peppers, red onions, and cherry tomatoes work beautifully.

Step 4: Preheat the Grill

  • Preheat your grill to medium-high heat. It should be hot enough to sear the chicken without sticking. If you're grilling indoors, use a grill pan. Lightly oil the grill grates to prevent sticking.

Step 5: Grill the Kabobs

  • Place the skewers on the grill. Cook for about 10-15 minutes, turning occasionally. The kabobs are ready when the chicken is cooked through (internal temperature reaches 165°F) and has nice grill marks.

Step 6: Serve

  • Remove the kabobs from the grill and let them rest for a few minutes. Serve with fresh lemon wedges to squeeze over the top for a refreshing touch.

Notes

  • Uniform Sizes: Cut chicken and vegetables into similar sizes for even cooking.
  • Don’t Overcrowd: Leave some space between the pieces on the skewer for better heat circulation.
  • Experiment with Marinades: Try different flavors like teriyaki or Mediterranean spice blends for a unique twist.
  • Use Fresh Herbs: Sprinkling fresh herbs like cilantro or parsley just before serving adds a pop of color and flavor.
  • Rest the Meat: Allowing cooked chicken to rest helps keep it juicy.
