Equipment

  • Instant Pot

Ingredients

  • 1 teaspoon fine kosher salt
  • 2 to 3 pounds boneless skinless chicken fillets
  • 1/2 teaspoon smoked sweet paprika
  • 1/2 teaspoon garlic powder
  • 1 cup low-sodium chicken broth or plain water
  • 1 teaspoon dried thyme leaves
  • 1/2 teaspoon freshly ground black pepper

Instructions

Step 1: Prepare the Ingredients

  • First, you’ll need to gather all your ingredients. Make sure your Instant Pot is clean and ready to go. This step sets you up for success.

Step 2: Season the Chicken

  • In a bowl, combine the salt, smoked paprika, garlic powder, thyme, and black pepper. Rub the spice mixture all over the chicken fillets. This is where the flavor will come from, so don't be shy with the seasoning.

Step 3: Add the Chicken to the Pot

  • Place the seasoned chicken fillets in the Instant Pot. Next, pour the chicken broth (or water) over the chicken. You want just enough liquid to create steam but not so much that the chicken is submerged.

Step 4: Lock and Cook

  • Close the lid of the Instant Pot and ensure the valve is set to “sealing.” Use the “manual” or “pressure cook” setting and set the timer for 10 minutes. Yes, just 10 minutes! The Instant Pot will work its wonders.

Step 5: Release the Pressure

  • Once the cooking time is done, it’s important to perform a quick release of the pressure. Carefully switch the valve to “venting,” and once the steam is released, open the lid. You should see perfectly cooked chicken.

Step 6: Shred the Chicken

  • Transfer the cooked chicken to a mixing bowl. Using two forks (or meat claws, if you have them!), shred the chicken until you reach your desired consistency. The beauty here is that it should fall apart easily.

Step 7: Enjoy

  • Now, it’s time to enjoy your creation! Toss it in your favorite recipe or store it for meals during the week.

Notes

  • Use a Meat Thermometer: Check the internal temperature. It should be at least 165°F.
  • Experiment with Flavors: Feel free to get creative and add other spices! Cumin or chili powder can change the whole vibe.
  • Don’t Overcook: 10 minutes will do the trick. Overcooked chicken can turn dry.
  • Save the Broth: That flavorful broth can be used in soups or sauces. Don’t waste it!
  • Make It a Meal: Add veggies into the pot with the chicken for a well-rounded one-pot meal.
