Equipment

  • Bowls

Ingredients

  • 1/2 cup Diced cucumbers
  • 2 tbsp Green Pepper chopped
  • 2 Cooked potatoes diced
  • 5 Scallions sliced
  • 1/4 cup Chili sauce
  • 1/4 tsp dry mustard
  • 1/4 cup olive oil
  • 1/2 cup apple cider vinegar
  • 2 Hard-boiled eggs sliced
  • 1/2 lb fresh mushrooms sliced
  • 3 Radishes diced
  • 2 medium Tomatoes cut into wedges
  • Salt and pepper
  • 1/2 head lettuce
  • 6 slices bacon fried and crumbled (optional)
  • 2 cups Canned beans

Instructions

Step 1: Preparing the Dressing

  • In a small bowl, whisk together olive oil, chili sauce, apple cider vinegar, and dry mustard until well combined. Season with salt and pepper to taste, and set aside to let the flavors mingle.

Step 2: Assembling the Salad

  • Begin by layering the lettuce at the base of a large salad bowl, creating a bed of green goodness to support the other ingredients.
  • Add the sliced scallions, chopped green pepper, diced radishes, and mushrooms to the bowl, distributing them evenly for a colorful presentation.
  • Gently mix in the canned beans, cooked potatoes, and diced cucumbers, infusing the salad with heartiness and crunch.
  • Arrange the sliced hard-boiled eggs and tomato wedges on top of the salad, adding a protein-packed punch and a burst of freshness.
  • If desired, sprinkle the crispy bacon crumbles over the salad for an extra layer of smoky flavor and indulgence.

Notes

– To enhance the flavor profile, consider marinating the vegetables in the dressing before assembling the salad for a deeper infusion of tastes.
– For a vegetarian twist, omit the bacon and add roasted nuts or seeds for a crunchy alternative.
– Experiment with different varieties of beans and mushrooms to customize the salad to your liking.
– If you prefer a spicier kick, add a dash of hot sauce or crushed red pepper flakes to the dressing for an added zing.
– For a touch of sweetness, drizzle honey or maple syrup over the salad before serving to balance the savory elements.
