Ingredients

  • 4 Cup All Purpose Flour
  • 2 Cup Room Temperature Unsalted Butter
  • 2 Large Egg Yolk
  • 1 Cup Sugar
  • 1 Cup Light Brown Sugar
  • 4 Teaspoons Cornstarch
  • 1 Teaspoon Vanilla Extract
  • 1 Teaspoon Salt
  • 1 Cup Sugar For Rolling
  • 1 Cup Jam Flavor Of Your Choice

Instructions

  • In a large mixing bowl, cream together the butter and sugars until light and fluffy.
  • Add in the egg yolk and vanilla extract, mixing until well combined.
  • In a separate bowl, sift together the flour, cornstarch, and salt. Gradually add this mixture to the wet ingredients, mixing until a dough forms.
  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • Roll the dough into 1-inch balls and place them on the baking sheet, leaving about 2 inches in between each cookie.
  • Use your thumb or the back of a teaspoon to make an indentation in the center of each cookie.
  • Fill each indentation with about ½ teaspoon of jam.
  • Bake for 12-15 minutes, or until the edges start to turn golden brown.
  • Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
  • Once cooled, sprinkle powdered sugar over the cookies for an extra touch of sweetness.

Notes

• Make sure the butter is at room temperature before beginning.
• If the dough is too dry, add a tablespoon of water.
• Roll the cookies into balls before pressing down with your thumb.
• Make sure to leave a deep indentation in the center of each cookie.
• Bake the cookies until golden brown.
• Allow the cookies to cool before adding the jam.
• Sprinkle with powdered sugar before serving.
