Ingredients

  • 5 cups all-purpose flour
  • 1 box Kellogg’s Raisin Bran Cereal 16.6 oz
  • 1 tsp salt
  • 1 tsp ground cinnamon
  • 5 tsp baking soda
  • 1 quart low-fat buttermilk
  • 3 cups granulated sugar
  • 4 beaten eggs large
  • 1 cup vegetable or canola oil
  • 1 1/2 cup semi-sweet mini chocolate morsels

Instructions

Step 1:

  • In a very large mixing bowl, pour in the all-purpose flour and the Kellogg’s Raisin Bran Cereal.

Step 2:

  • Pour the low-fat buttermilk over the cereal and gently mix everything together using a spoon until well combined.

Step 3:

  • Stir the cereal mixture thoroughly to ensure the flakes are evenly distributed and broken up.

Step 4:

  • Using a large spoon, add in the salt, cinnamon, baking soda, sugar, beaten eggs, vegetable oil, and semi-sweet mini chocolate morsels. Mix all the ingredients together until they are fully incorporated.

Step 5:

  • Allow the mixture to sit for 20 minutes to let the flavors meld together, then give it another stir.

Step 6:

  • Preheat the oven to 375°F and prepare muffin tins by spraying them with baking spray to prevent sticking.

Step 7:

  • Fill each muffin tin about ¾ of the way full with the muffin batter, distributing it evenly among the tins.

Step 8:

  • Bake the muffins in the preheated oven for 14 minutes for mini-muffin size, 16 minutes for regular muffin size, or 18-20 minutes for jumbo size, or until they are golden brown and a toothpick inserted into the center comes out clean.

Step 9:

  • Once baked, remove the muffins from the oven and allow them to cool in the muffin tins for a few minutes before transferring them to a wire rack to cool completely.

Notes

– Be sure to use large eggs for the best texture and rise in the muffins.
– If you prefer a healthier option, you can substitute the sugar with honey or maple syrup.
– For a nutty flavor, you can add chopped walnuts or pecans to the batter.
