Ingredients

  • 1 tsp baking powder
  • 3/4 cup butter or margarine melted
  • 1 cup granulated sugar
  • 14 oz. can peaches drained (reserve juice)
  • 1 cup flour
  • A pinch of salt
  • 3/4 cup milk low fat

Instructions

Step 1: Preheat the oven and prepare the baking dish

  • – Preheat your oven to 350°F (175°C).
  • – Grease a 9×9 inch baking dish with butter to prevent sticking.

Step 2: Prepare the batter

  • – In a mixing bowl, combine the flour, sugar, baking powder, and salt.
  • – Add the melted butter and milk to the dry ingredients, and mix until well combined.

Step 3: Assemble the pie

  • – Pour the batter into the greased baking dish, spreading it evenly.

Step 4: Add the peaches

  • – Arrange the drained peaches on top of the batter in a single layer.

Step 5: Bake the pie

  • – Bake in the preheated oven for 40-45 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.

Notes

– For a more decadent version of lazy man pie, try adding a sprinkle of cinnamon to the batter before baking.
– Serve the pie warm with a dollop of whipped cream or a scoop of vanilla ice cream for an extra indulgent treat.
