Macadamia nut okoshi is a traditional Japanese snack that is made with roasted macadamia nuts, rice, and sugar. It is a sweet and crunchy snack that can be enjoyed at any time of the day.
Take the freshly roasted macadamia nuts and roughly chop them into smaller pieces. Set them aside.
STEP 2 – Combine Dry Ingredients:
In a mixing bowl, combine the finely ground organic brown rice flour, organic granulated cane sugar, and Himalayan pink salt. Mix these dry ingredients thoroughly.
STEP 3 – Heat the Oil:
In a large, heavy-bottomed pot or deep fryer, heat the high-oleic sunflower oil over medium heat until it reaches a temperature of around 325-350°F (163-177°C).
STEP 4 – Coat the Macadamia Nuts:
Take the chopped macadamia nuts and add them to the bowl with the dry ingredients. Toss the nuts until they are evenly coated with the flour mixture.
STEP 5 – Frying Process:
Carefully drop small batches of the coated macadamia nuts into the hot oil. Fry them for about 3-4 minutes or until they turn golden brown and crispy.
STEP 6 – Drain Excess Oil:
Using a slotted spoon or a wire mesh skimmer, remove the fried macadamia nuts from the oil and place them on a plate lined with paper towels. This will help absorb any excess oil.
STEP 7 – Cooling and Setting:
Allow the fried macadamia nuts to cool completely. As they cool, the coating will harden, giving them a crispy texture.
STEP 8 – Serve and Store:
Once cooled and set, the Macadamia Nut Okoshi is ready to be enjoyed! Serve them as a crunchy snack or store them in an airtight container for later consumption.
