Ingredients

  • 1 tsp chaat masala
  • ½ onion minced
  • 1 tomato diced
  • ¼ tsp salt
  • 2 tbsp tomato ketchup
  • ¼ bell pepper diced
  • 2 tbsp fresh coriander leaves chopped
  • 1 green chili minced
  • 3 slices of bread white or whole wheat
  • 3 tsp butter
  • ¼ tsp turmeric powder
  • 1 tsp cumin seeds
  • ½ carrot shredded
  • ½ tsp Kashmiri red chili powder
  • ¼ tsp freshly ground black pepper
  • 3 tsp green chutney
  • 1 tbsp lemon juice
  • ½ cup shredded cheddar cheese
  • 2 tbsp sweet corn kernels
  • 2 tsp cooking oil

Instructions

Step 1: Prepare the Veggies

  • First, get all your veggies ready. Mince the onion and green chili, dice the tomato and bell pepper, and shred the carrot. Chop the coriander leaves finely.

Step 2: Make the Spice Mix

  • In a small bowl, combine the chaat masala, salt, turmeric powder, Kashmiri red chili powder, and black pepper.

Step 3: Sauté the Veggies

  • Heat 2 tsp of cooking oil in a pan. Add the cumin seeds and wait for them to pop. Add the minced onion and green chili. Sauté until the onions turn translucent. Add the diced tomato, bell pepper, and shredded carrot. Cook for 2-3 minutes. Sprinkle the spice mix over the veggies and cook for another 2 minutes. Add the sweet corn kernels and cook for a minute more. Set aside.

Step 4: Prepare the Bread

  • Spread butter on one side of each bread slice. Then, spread green chutney on the same side.

Step 5: Assemble the Toast

  • Spread the sautéed veggie mixture evenly over the buttered and chutney side of each bread slice.

Step 6: Add the Cheese

  • Top each slice with a generous amount of shredded cheddar cheese. Drizzle with lemon juice for added zest.

Step 7: Toast It

  • Place the assembled slices on a preheated griddle or in an oven. Toast until the bread is crispy and the cheese has melted to a golden-brown perfection.

Notes

  • Use Whole Wheat Bread: For a healthier option, you can switch to whole wheat bread.
  • Add Veggies: Feel free to add or swap veggies. Mushrooms and spinach are great additions.
  • Control the Heat: Adjust the amount of green chili and Kashmiri red chili powder according to your heat tolerance.
  • Preheat Properly: Make sure your griddle or oven is properly preheated to ensure even toasting.
  • Fresh Cheese: Freshly grated cheese melts better and tastes superior to pre-shredded cheese.
