Instructions
In a bowl, mix the yogurt and white sugar until well combined.
In another bowl, mash half of the raspberries to create a puree. Leave the other half whole for layering.
Begin layering your parfait by starting with a spoonful of yogurt mixture at the bottom of your serving cups.
Layer with a spoonful of mashed raspberries, then add granola on top.
Add another layer of yogurt, followed by whole raspberries and blueberries.
Repeat the layers until you reach the top of your serving cup, ending with a final layer of yogurt.
Top with cubed nectarines and pineapples.
Garnish with a mint leaf, if desired.
Serve immediately or refrigerate for later enjoyment.
Notes
Experiment with different fruit combinations to find your favorite parfait flavors.
Use plain or flavored yogurt for different variations.
For a healthier option, use low-fat or non-fat yogurt and sugar substitutes.
Swap out the granola for chopped nuts or seeds for added crunch.
