Ingredients

  • 1 1/4 cups all-purpose flour
  • 1/2 tsp olive oil or vegetable oil
  • 1 and ½ tsp brown sugar or white granulated sugar
  • 1/2 egg beaten with 1/2 teaspoon of water and a pinch of salt
  • 1/4 tablespoon poppy seeds
  • 1/4 tablespoon toasted sesame seeds
  • 1 tsp instant yeast rapid-rise or bread machine yeast
  • A pinch of kosher salt
  • 3/4 cup water

Instructions

Activate Yeast:

  • In a small bowl, combine the instant yeast with 1/4 cup of lukewarm water. Allow it to sit for 5-10 minutes until it becomes frothy. This indicates that the yeast is activated.

Prepare Dough:

  • In a large mixing bowl, combine the all-purpose flour, brown sugar (or white granulated sugar), and a pinch of kosher salt. Mix well.

Create Well:

  • Make a well in the center of the dry ingredients and pour in the activated yeast mixture.

Incorporate Ingredients:

  • Gradually incorporate the flour into the yeast mixture, stirring continuously to form a dough.

Knead the Dough:

  • Turn the dough out onto a floured surface and knead for about 5-7 minutes, or until the dough becomes smooth and elastic. Add a little more flour if the dough is too sticky.

Add Oil:

  • Drizzle the olive oil (or vegetable oil) over the dough and knead for an additional 2-3 minutes until the oil is fully incorporated.

First Rise:

  • Place the dough in a lightly oiled bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 hour or until it has doubled in size.

Preheat Oven:

  • Preheat your oven to 400°F (200°C).

Divide and Shape:

  • Punch down the risen dough and divide it into equal portions. Shape each portion into a round roll.

Egg Wash and Seeds:

  • In a small bowl, beat the egg with water and a pinch of salt. Brush the tops of the rolls with the egg wash and sprinkle poppy seeds and toasted sesame seeds over the rolls.

Second Rise:

  • Place the rolls on a baking sheet lined with parchment paper and let them rise for another 15-20 minutes.

Bake:

  • Bake the rolls in the preheated oven for 15-20 minutes or until they are golden brown and sound hollow when tapped on the bottom.

Cool and Enjoy:

  • Allow the New York Hard Rolls to cool on a wire rack before slicing and serving. Enjoy these delicious rolls with your favorite spreads or fillings!

Notes

• Make sure to knead the dough for at least 3-4 minutes to ensure a soft and chewy roll.
