- ½ cup Mayonnaise
- 2 Tbsp. Chipotle peppers in Adobo Sauce pureed
- ½ Tbsp. Sugar
- 1 Lime juiced
- 2 Small Focaccia Breads cut into 8 sandwich-size slices
- 12 Smoked Turkey Breast Slices
- Olive Oil
- ½ Avocado sliced
- ½ Onion sliced
- 1 cup Arugula or other greens
Preheat your oven to 375 degrees.
Cut the focaccia bread into 8 sandwich-size slices and place them on a baking sheet lined with parchment.
Brush the slices of bread lightly with olive oil and bake for 10 minutes, until the bread is lightly toasted.
Place 3-4 turkey slices on each slice of bread and top with tomatoes, lettuce, onion and avocado slices.
In a small bowl, mix together mayonnaise, chipotle peppers, sugar, and lime juice. Spread the chipotle mayo onto one side of each sandwich.
Top with arugula and the other slice of bread to make a sandwich. Serve immediately.
This sandwich can be stored in an airtight container in the refrigerator for up to three days. It can also be frozen for up to three months. When you are ready to eat it, simply thaw it in the refrigerator overnight and then reheat it in the oven or in a toaster oven.
