In a mixing bowl, combine the drained tuna, mayonnaise, Dijon mustard, sweet pickle relish, lemon juice, parsley, salt, and pepper. Mix well until all ingredients are fully blended. You should aim for a creamy consistency, but not overly mushy.
Step 2: Slice the Vegetables
While your tuna salad is coming together, slice your red onions and tomatoes. Aim for paper-thin onion slices and sturdy tomato slices. This way, each bite is filled with crunch and sweetness.
