Equipment

  • food processor

Ingredients

  • 6 oz shredded rotisserie chicken
  • 2 flat loaves of garlic herb focaccia bread
  • 1 ripe avocado thinly sliced
  • ¼ cup creamy mayonnaise
  • 6 chipotle peppers in adobo sauce
  • 1 tbsp smoked paprika
  • ¼ cup fresh cilantro finely chopped
  • 1 tbsp lime juice
  • ¼ cup Peppadew peppers chopped
  • 4 oz gouda cheese thinly sliced
  • 2 tbsp water

Instructions

  • You now know what you need. Let’s take the plunge and create this delightful sandwich.

Step 1: Prepare the Chipotle Mayonnaise

  • Start by mixing your mayonnaise with the chipotle peppers and smoked paprika. Use a food processor to blend until smooth. If the mixture is too thick, add a bit of water to reach your desired consistency.

Step 2: Slice the Avocado

  • Take your ripe avocado and slice it thinly. You want generous pieces, as they will provide that luxurious creamy texture in each bite.

Step 3: Toast the Garlic Herb Focaccia

  • In a skillet or a toaster oven, lightly toast the garlic herb focaccia. This step adds a nice crunch and enhances the flavors of the bread.

Step 4: Assemble the Sandwich

  • Spread the mayo-chipotle mixture onto one side of each piece of focaccia. Layer shredded chicken, avocado slices, chopped Peppadew peppers, fresh cilantro, and gouda cheese on the bottom half.

Step 5: Top and Serve

  • Place the other piece of focaccia on top and press down gently. Cut in half to share or to enjoy all to yourself!

Notes

  • Use fresh ingredients: Choose ripe avocados and fresh herbs for the best flavor.
  • Adjust the spice level: If you can’t handle too much heat, use fewer chipotle peppers.
  • Opt for high-quality mayonnaise: It makes a difference in taste.
  • Add other veggies: Consider slicings like tomatoes or cucumbers if you’re feeling adventurous.
  • Make it ahead: This sandwich can be prepped in advance and packed for lunch.
