Ingredients

  • 6 cups long-grain white rice
  • 1.5 lb ground pork
  • 1.5 lb chicken liver
  • 12 cups chicken broth
  • 0.75 cup diced onions
  • 1.5 cup green bell pepper
  • 3 bay leaf
  • 12 tbsp butter
  • 12 cloves garlic
  • 1.5 tsp dry mustard
  • 6 tsp old bay seasoning
  • 3 tsp oregano
  • 1 tsp salt
  • 1 tsp black pepper

Instructions

  • Cook the rice according to package instructions using chicken broth instead of water for more flavor.
  • In a food processor, pulse the onion and bell pepper until finely chopped.
  • Heat butter in a large pan over medium heat. Add the chopped vegetables and sauté until they are soft.
  • Add the ground pork and cook until browned, breaking it up into small pieces.
  • Add the chicken livers and cook until they are cooked through.
  • Stir in the garlic, dry mustard, old bay seasoning, oregano, salt, and pepper. Cook for 2-3 minutes to bring out the flavors.
  • Add the cooked rice to the pan and stir everything together until well combined.

Cook for an additional 5 minutes to allow the flavors to meld together.
