- 6 cups long-grain white rice
- 1.5 lb ground pork
- 1.5 lb chicken liver
- 12 cups chicken broth
- 0.75 cup diced onions
- 1.5 cup green bell pepper
- 3 bay leaf
- 12 tbsp butter
- 12 cloves garlic
- 1.5 tsp dry mustard
- 6 tsp old bay seasoning
- 3 tsp oregano
- 1 tsp salt
- 1 tsp black pepper
Cook the rice according to package instructions using chicken broth instead of water for more flavor.
In a food processor, pulse the onion and bell pepper until finely chopped.
Heat butter in a large pan over medium heat. Add the chopped vegetables and sauté until they are soft.
Add the ground pork and cook until browned, breaking it up into small pieces.
Add the chicken livers and cook until they are cooked through.
Stir in the garlic, dry mustard, old bay seasoning, oregano, salt, and pepper. Cook for 2-3 minutes to bring out the flavors.
Add the cooked rice to the pan and stir everything together until well combined.
Cook for an additional 5 minutes to allow the flavors to meld together.
