Equipment

Ingredients

  • 2 cups all-purpose flour
  • 4 qt Half and Half
  • 12 tsp Phillips Seafood Seasoning
  • 2 minced onions
  • 4 lb Phillips Crab Meat
  • 2 sticks of butter
  • 12 tsp fresh parsley

Instructions

Prep the Crab Meat:

  • Carefully inspect the Phillips Crab Meat for any shells or cartilage. Set aside.

Prepare the Roux:

  • In a large pot, melt the 2 sticks of butter over medium heat.
  • Gradually whisk in 2 cups of all-purpose flour to create a roux. Stir continuously to avoid lumps. Cook the roux until it reaches a golden brown color.

Sauté Onions:

  • Add the minced onions to the roux and sauté until they become translucent.

Add Phillips Seafood Seasoning:

  • Sprinkle 12 tsp of Phillips Seafood Seasoning into the pot. Stir well to incorporate the seasoning with the roux and onions.

Pour in Half and Half:

  • Slowly pour in the 4 quarts of Half and Half, stirring constantly to combine the liquid with the roux. Continue stirring until the mixture thickens.

Incorporate Crab Meat:

  • Gently fold in the Phillips Crab Meat, being careful not to break up the crab chunks too much. Allow the soup to simmer on low heat, stirring occasionally.

Season and Simmer:

  • Taste the soup and adjust the seasoning if necessary. You can add more Phillips Seafood Seasoning according to your preference. Let the soup simmer for about 15-20 minutes to allow the flavors to meld.

Garnish with Fresh Parsley:

  • Just before serving, sprinkle 12 tsp of fresh parsley over the soup as a garnish. This adds a fresh and vibrant touch to the dish.

Serve Hot:

  • Ladle the hot Phillips Crab Soup into bowls and serve immediately. You can accompany it with crusty bread or crackers if desired.

– Use Yukon Gold or Russet potatoes for best results.
– Use either white or yellow onion.
– Use either whole or 2% milk.
– Use either chicken or vegetable broth.
