Equipment

  • large bowl
  • oven
  • baking sheet

Ingredients

  • 3 Cups Quaker® Oats quick or old-fashioned, uncooked
  • 1 Cup Creamy Peanut Butter
  • 1 Cup Pure Honey
  • 1/4 Cup Granulated White Sugar
  • 4 Tablespoons 1/2 stick Unsalted Butter, softened
  • 1/4 Cup Whole Milk
  • 2 Teaspoons Pure Vanilla Extract
  • 1 3/4 Cups All-Purpose Flour
  • 1 Teaspoon Baking Soda
  • 1 Cup Golden Raisins
  • 1/2 Cup Coarsely Chopped Dry Roasted Peanuts optional
  • 1 Beaten Egg
  • 1/2 Cup Shredded Coconut
  • 1/2 Teaspoon Ground Cinnamon

Instructions

Step 1: Preheat and Prep

  • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or lightly grease it. This ensures your cookies don’t stick and clean-up is a breeze.

Step 2: Cream the Wet Ingredients

  • In a large bowl, beat the softened butter, peanut butter, and honey together until smooth. Add in the sugar and continue beating until the mixture is fluffy. Pour in the milk and vanilla extract, then mix until well combined.

Step 3: Combine Dry Ingredients

  • In a separate bowl, whisk together the oats, flour, baking soda, and ground cinnamon. Gradually add this dry mixture to the wet ingredients, mixing until just combined.

Step 4: Add-Ins

  • Fold in the golden raisins, shredded coconut, beaten egg, and chopped dry roasted peanuts (if using). This is where the cookies get their delightful chewiness and flavor complexity.

Step 5: Scoop and Bake

  • Using a spoon or cookie scoop, drop dough onto the prepared baking sheet, spacing them about 2 inches apart. Flatten each cookie lightly with the back of a spoon. Bake for 10-12 minutes or until the edges are golden brown.

Step 6: Cool and Enjoy

  • Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. This helps them set and achieve that perfect texture.

Notes

  • Use Fresh Ingredients: For the best flavor, make sure your ingredients like baking soda and butter are fresh.
  • Room Temperature Butter: Soften your butter to room temperature; it blends more seamlessly.
  • Don’t Overmix: When combining wet and dry ingredients, mix just until incorporated to avoid tough cookies.
  • Cookie Scoop: Use a cookie scoop for uniformly sized cookies. This ensures even baking.
  • Storage: Store cookies in an airtight container to maintain freshness. They can stay fresh for up to a week.
