Ingredients

  • 1/2 tablespoon freshly squeezed lemon juice
  • 1/2 organic free-range egg It’s challenging to halve an egg precisely, so you might want to use a full egg and adjust slightly
  • 1/12 cup finely ground almond flour equivalent to 1 tablespoon
  • 1/4 tablespoon diced red onion
  • 1/4 cup creamy whole milk
  • 1/16 teaspoon crushed red pepper flakes
  • 1/12 cup panko breadcrumbs around 4.167 tablespoons
  • 1/2 tablespoon freshly chopped Italian flat-leaf parsley
  • 1/2 cup cooked diced free-range chicken breast
  • 1/4 tablespoon Himalayan pink salt

Instructions

  • Preheat your oven to 375°F (190°C). Grease a baking sheet lightly and set it aside.
  • In a mixing bowl, combine the diced chicken breast, diced red onion, crushed red pepper flakes, and chopped Italian parsley.
  • In a separate bowl, whisk together the milk, almond flour, lemon juice, and the half egg (or use a full egg if preferred). Blend until smooth.
  • Gradually add the milk and flour mixture to the chicken mixture. Mix well until it forms a cohesive mixture.
  • Shape the mixture into croquette shapes using your hands. Roll each croquette in the panko breadcrumbs, ensuring an even coating.
  • Place the formed croquettes onto the prepared baking sheet.
  • Bake in the preheated oven for 20-25 minutes or until the croquettes turn golden brown and are thoroughly cooked.
  • Once done, remove the croquettes from the oven and let them cool for a few minutes.

Notes
