Equipment

  • oven

Ingredients

  • 2 whole chicken or use 10 pounds bone-in chicken parts
  • 6 cloves mashed and chopped black garlic
  • 6 cloves mashed and chopped garlic
  • 2 Tablespoon sesame oil
  • Freshly ground black pepper
  • 2 Tablespoon vegetable oil
  • 4 Tablespoons light soy sauce
  • 4 Tablespoons oyster sauce
  • 2 Tablespoon honey
  • 2 Tablespoon hoisin sauce
  • 1 teaspoon Aleppo pepper
  • Coarse salt
  • 4 green chopped onions garnish

Instructions

  • Preheat your oven to 375°F (190°C).
  • In a bowl, mix together the mashed black garlic, mashed garlic, sesame oil, and freshly ground black pepper.
  • Rub the mixture on the chicken, making sure to cover all sides.
  • In a roasting pan, add vegetable oil and place the chicken on top.
  • Roast in the oven for 45 minutes to an hour, or until fully cooked.
  • While the chicken is roasting, prepare the black garlic sauce. In a small saucepan, mix together the light soy sauce, oyster sauce, honey, hoisin sauce, and Aleppo pepper.
  • Cook on medium heat until the sauce thickens, about 5-10 minutes.
  • Once the chicken is fully cooked, brush the black garlic sauce all over the chicken.
  • Sprinkle coarse salt over the chicken before serving.
  • Garnish with chopped green onions and serve hot.

Notes

  • To ensure the chicken stays juicy and tender, make sure to marinate it before roasting.
  • If you don’t have black garlic, you can use regular garlic for the sauce.
  • For a spicier version of the dish, add a teaspoon of red pepper flakes to the sauce.
  • If you want a thicker sauce, add a tablespoon of cornstarch or flour to the sauce before cooking.
  • To make the dish vegan, replace the chicken with tofu and use vegan butter.
  • Make sure to thoroughly rub the black garlic mixture onto the chicken for maximum flavor.
  • Use a meat thermometer to ensure that the chicken is fully cooked before serving.
  • Feel free to adjust the amount of Aleppo pepper in the sauce according to your desired level of heat.
