- 2 whole chicken or use 10 pounds bone-in chicken parts
- 6 cloves mashed and chopped black garlic
- 6 cloves mashed and chopped garlic
- 2 Tablespoon sesame oil
- Freshly ground black pepper
- 2 Tablespoon vegetable oil
- 4 Tablespoons light soy sauce
- 4 Tablespoons oyster sauce
- 2 Tablespoon honey
- 2 Tablespoon hoisin sauce
- 1 teaspoon Aleppo pepper
- Coarse salt
- 4 green chopped onions garnish
Preheat your oven to 375°F (190°C).
In a bowl, mix together the mashed black garlic, mashed garlic, sesame oil, and freshly ground black pepper.
Rub the mixture on the chicken, making sure to cover all sides.
In a roasting pan, add vegetable oil and place the chicken on top.
Roast in the oven for 45 minutes to an hour, or until fully cooked.
While the chicken is roasting, prepare the black garlic sauce. In a small saucepan, mix together the light soy sauce, oyster sauce, honey, hoisin sauce, and Aleppo pepper.
Cook on medium heat until the sauce thickens, about 5-10 minutes.
Once the chicken is fully cooked, brush the black garlic sauce all over the chicken.
Sprinkle coarse salt over the chicken before serving.
Garnish with chopped green onions and serve hot.
- To ensure the chicken stays juicy and tender, make sure to marinate it before roasting.
- If you don’t have black garlic, you can use regular garlic for the sauce.
- For a spicier version of the dish, add a teaspoon of red pepper flakes to the sauce.
- If you want a thicker sauce, add a tablespoon of cornstarch or flour to the sauce before cooking.
- To make the dish vegan, replace the chicken with tofu and use vegan butter.
- Make sure to thoroughly rub the black garlic mixture onto the chicken for maximum flavor.
- Use a meat thermometer to ensure that the chicken is fully cooked before serving.
