Instructions

STEP 1

  • Preheat Your Oven To 350°F (175°C). Grease A Casserole Dish With Butter Or Cooking Spray.

STEP 2

  • In A Skillet Over Medium Heat, Sauté The Diced Onion Or Shallots Until They Turn Translucent. Add In The Sliced Yellow Squash Or Zucchini And Cook Until They Are Tender But Not Mushy. Season With Salt, Pepper, Smoked Paprika, And Thyme For Added Flavor.

STEP 3

  • In a mixing bowl, combine the beaten eggs, melted butter or clarified butter, grated cheddar or Gruyère cheese, and almond milk. Mix these ingredients thoroughly.

STEP 4

  • Add the cooked squash and onion mixture to the bowl with the egg and cheese mixture. Stir well until everything is evenly combined.

STEP 5

  • Pour half of this mixture into the greased casserole dish. Sprinkle a layer of crushed Ritz crackers or buttery biscuit crumbs over the mixture. Then, pour the remaining mixture on top.
