Ingredients

  • 2 cups yellow cornmeal
  • 2 tablespoon baking powder
  • 1 cup all-purpose flour
  • 1 cup finely chopped onion
  • 1.5 tablespoon sugar
  • 1/2 teaspoon cayenne pepper
  • 1 teaspoon salt
  • 1/2 teaspoon onion powder
  • 1 cup milk
  • 1/2 teaspoon paprika
  • 2 beaten egg
  • 1/2 teaspoon garlic powder
  • Vegetable oil for frying

Instructions

  • In a large mixing bowl, combine the cornmeal, flour, chopped onion, sugar, cayenne pepper, salt, paprika, onion powder, and garlic powder.
  • In a separate bowl, combine the milk and beaten eggs.
  • Gradually add the wet ingredients to the dry ingredients, stirring until a thick batter forms.
  • Heat vegetable oil in a deep fryer or large pot over medium-high heat.
  • Using an ice cream scoop or spoon, drop small balls of batter into the hot oil.
  • Fry until golden brown and crispy, about 3-5 minutes.
  • Remove from the oil and place on a paper towel-lined plate to absorb excess oil.
  • Serve hot with your favorite dipping sauce or alongside your desired main dish.

Notes

– Make sure to use a light hand when mixing the ingredients together. Over-mixing the dough will result in tough hush puppies.
– If the hush puppies are not cooking evenly, turn the heat up slightly.
– To make sure the hush puppies stay crispy, make sure to serve them right away.
– If you don’t have buttermilk, you can use regular milk in its place.
– For a more flavorful hush puppy, add in some chopped fresh herbs or grated cheese.
– If you don’t have a deep fryer, you can use a large pot filled with oil.
