Ingredients

  • 1/3 cup soft goat cheese or grated Parmesan

  • 1 pound cauliflower florets
  • 1 large egg beaten

Instructions

Step 1:

  • Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.

Step 2:

  • Start by preparing the cauliflower crust. If using fresh cauliflower, trim the florets and remove any tough stems. If using frozen cauliflower, ensure it is thawed completely.

Step 3:

  • Place the cauliflower florets in a food processor and pulse until finely chopped, resembling the texture of rice.

Step 4:

  • Transfer the cauliflower “rice” to a microwave-safe bowl and microwave on high for 5 minutes, or until softened.

Step 5:

  • Allow the cauliflower to cool slightly, then transfer it to a clean kitchen towel or cheesecloth. Wrap the cauliflower in the cloth and squeeze out as much excess moisture as possible. This step is crucial, as it helps achieve a firmer and crisper crust.

Step 6:

  • In a large bowl, combine the drained cauliflower, beaten egg, soft goat cheese, dried oregano, and salt. Mix well until all the ingredients are evenly incorporated.

Step 7:

  • Transfer the cauliflower mixture onto the prepared baking sheet. Using your hands or the back of a spoon, spread out the mixture into a thin and even circle or rectangle, forming the pizza crust.

Step 8:

  • Bake the crust in the preheated oven for 15-20 minutes, or until it turns golden brown and holds its shape.
