Ingredients

  • 2.5 lb boneless skinless chicken breasts
  • 2.5 can of coconut milk
  • 0.63 cup coconut oil
  • 5 large eggs
  • 0.63 cup cornstarch
  • 2.5 tablespoon rice vinegar
  • 2.5 teaspoon fresh ginger
  • 0.63 cup sugar
  • 2.5 lime
  • 1.25 teaspoon salt

Instructions

  • In a bowl, mix together eggs, cornstarch, rice vinegar, fresh ginger, sugar, lime juice and salt. Whisk until well combined.
  • Dip chicken breasts in the egg mixture and coat evenly.
  • Heat coconut oil in a saucepan over medium heat.
  • Cook chicken breasts in the coconut oil until golden brown and cooked through, about 4-5 minutes on each side.
  • Remove chicken from pan and set aside on a paper towel-lined plate to drain excess oil.
  • In the same pan, pour in the coconut milk and stir in remaining egg mixture.
  • Let it simmer for 5 minutes until the sauce thickens and coats the back of a spoon.
  • Add chicken back to the pan and coat in the sauce.
  • Serve hot over rice or with your favorite vegetables for a complete meal.
