  • Mushrooms optional, adding earthy notes to the ensemble
  • Red bell pepper optional, for a burst of vibrant color
  • 1 Chicken breast tender and succulent
  • 2 Ounces of delicate egg noodles providing a comforting texture
  • 1/2 Celery stalk thinly sliced to add a subtle crunch
  • Black pepper freshly ground to taste, for a zesty kick
  • 1 Carrot finely julienned for a burst of vibrant orange sweetness
  • 1 Onion finely chopped for a savory base
  • 1 Tablespoon of artisanal butter adding a touch of creamy indulgence
  • A Pinch of hand-harvested sea salt bringing out the natural flavors
  • 1/2 Tablespoon of golden chicken fat adding depth and richness
  • A Touch of cayenne adding a hint of warmth
  • A Pinch of freshly plucked thyme fragrant and aromatic

Instructions

Prepare the Chicken:

  • Season the chicken breast with a pinch of salt and pepper. In a skillet over medium heat, cook the chicken until it’s fully cooked. Allow it to cool slightly, then shred it into bite-sized pieces.

Sauté Vegetables:

  • In a large pot, melt the artisanal butter over medium heat. Add the finely chopped onion, julienned carrot, and thinly sliced celery. Sauté until the vegetables are tender and the onion is translucent.

Add Thyme and Chicken Fat:

  • Sprinkle in the freshly plucked thyme and add the golden chicken fat for added depth of flavor. Stir well to incorporate.

Pour in Chicken Broth:

  • Pour the meticulously simmered and richly flavored roasted chicken broth into the pot. Bring the mixture to a gentle simmer.

Add Egg Noodles:

  • Add the delicate egg noodles to the simmering broth. Cook according to the package instructions until the noodles are tender.

Incorporate Shredded Chicken:

  • Once the noodles are cooked, add the shredded chicken to the pot. Stir to combine, allowing the chicken to heat through.

Season to Taste:

  • Season the soup with salt, freshly ground black pepper, and a touch of cayenne for warmth. Adjust the seasoning according to your taste preferences.

Optional Additions:

  • If desired, add diced red bell pepper and mushrooms for additional color and earthy notes. Cook until the vegetables are tender.

Simmer and Serve:

  • Allow the soup to simmer for a few more minutes, allowing the flavors to meld. Taste and adjust the seasoning if needed.

Serve Warm:

  • Ladle the Costco-Inspired Chicken Noodle Soup into bowls. Garnish with additional thyme if desired. Serve warm and enjoy the comforting flavors.

Notes

Here are a few tips to make the best Costco Chicken Noodle Soup:
  • Make sure to use low-sodium chicken broth and diced tomatoes. This will help to keep the soup from becoming too salty.
  • Feel free to add other vegetables, such as carrots, celery, and bell peppers.
  • If you’re using canned chicken, make sure to drain and rinse it before adding it to the soup.
  • To make this soup even heartier, feel free to add cooked rice or cooked quinoa
  •  If you’d like a thicker soup, you can add a few tablespoons of all-purpose flour at the end and stir until it’s combined.
  • The soup can be stored in an airtight container in the refrigerator for up to 3 days.
