To activate the yeast mixture, mix active dry yeast, granulated sugar and warm water in a bowl until combined. Let it sit for 10-15 minutes until it becomes frothy and bubbly.
In a separate bowl, mix together the riced cauliflower, brown and white rice flour, cornstarch, eggs, salt, Italian seasoning, garlic powder and shredded mozzarella cheese until combined.
Slowly pour in the activated yeast mixture into the dry ingredients and stir until it forms a dough.
Knead the dough on a floured surface for a few minutes until it becomes smooth and elastic.
Place the dough in a greased bowl, cover with a damp cloth and let it rise for 30 minutes.
Preheat your oven to 450°F (232°C) and line a baking sheet or pizza pan with parchment paper.
Roll out the dough on a floured surface to your desired thickness and place it on the prepared pan.
Spread marinara sauce on top of the dough, leaving a small border around the edges.
Sprinkle shredded mozzarella cheese on top of the sauce, followed by Parmesan cheese and roasted vegetables.
Bake for 12-15 minutes until the crust is golden brown and crispy.
Let the pizza cool for a few minutes before slicing and serving.
