Equipment

Ingredients

Yeast Mixture (for the pizza dough):

  • 4 teaspoons of active dry yeast
  • 1 cup of warm water around 110-115°F (43-46°C), to activate the yeast
  • 4 teaspoons of granulated sugar

Cauliflower Crust (for the pizza base):

  • 2 cups of riced cauliflower equivalent to 1/2 of a 2-pound head of cauliflower, processed or grated into small, rice-like pieces
  • 1 1/2 cups of white rice flour for a lighter texture
  • 2 cups of brown rice flour for a hearty, nutty flavor
  • 2 eggs for binding and structure
  • 1/2 teaspoon of salt for seasoning
  • 2/3 cup of cornstarch to enhance the crust’s crispiness
  • 2 teaspoons of garlic powder to infuse garlic flavor
  • 2 tablespoons of Italian seasoning a blend of herbs like oregano, basil, and thyme
  • 2 cups of shredded mozzarella cheese for a cheesy and gooey crust

Toppings (for one pizza):

  • 6 tablespoons of marinara sauce a classic tomato-based pizza sauce
  • 2/3 cup of Roasted Vegetables your choice of roasted vegetables like bell peppers, onions, or zucchini
  • 6 tablespoons of grated Parmesan cheese to add a savory, nutty element
  • 2 1/2 cups of shredded mozzarella cheese for a cheesy topping
  • 1/2 teaspoon of Italian seasoning for an extra burst of Italian flavor on top

Instructions

  • To activate the yeast mixture, mix active dry yeast, granulated sugar and warm water in a bowl until combined. Let it sit for 10-15 minutes until it becomes frothy and bubbly.
  • In a separate bowl, mix together the riced cauliflower, brown and white rice flour, cornstarch, eggs, salt, Italian seasoning, garlic powder and shredded mozzarella cheese until combined.
  • Slowly pour in the activated yeast mixture into the dry ingredients and stir until it forms a dough.
  • Knead the dough on a floured surface for a few minutes until it becomes smooth and elastic.
  • Place the dough in a greased bowl, cover with a damp cloth and let it rise for 30 minutes.
  • Preheat your oven to 450°F (232°C) and line a baking sheet or pizza pan with parchment paper.
  • Roll out the dough on a floured surface to your desired thickness and place it on the prepared pan.
  • Spread marinara sauce on top of the dough, leaving a small border around the edges.
  • Sprinkle shredded mozzarella cheese on top of the sauce, followed by Parmesan cheese and roasted vegetables.
  • Bake for 12-15 minutes until the crust is golden brown and crispy.
  • Let the pizza cool for a few minutes before slicing and serving.

Notes

• Make sure the water you use is warm, not hot. Hot water can kill the yeast and prevent the dough from rising.
• If the dough is too sticky, add a little more flour.
• If the dough is too dry, add a little more water.
• Knead the dough for at least 8 minutes for the best texture.
• Make sure the pizza crusts are well-greased before baking.
• Preheat the oven to the correct temperature before baking.
• Bake the pizza crusts until they are golden brown for the best texture.
• Let the pizza cool for a few minutes before serving.
