Preheat your oven to 350°F (175°C) and grease an 8-inch cake pan with cooking spray.
In a large mixing bowl, sift together the flour, sugar, cocoa powder, baking powder, and baking soda.
In a separate bowl, beat together the milk, egg, sour cream, vegetable oil, espresso powder, vanilla extract, and salt until well combined.
Slowly add the dry ingredients to the wet mixture in three parts until just combined. Do not overmix.
Pour the batter into the greased cake pan and bake for 35 minutes, or until a toothpick inserted in the center comes out clean.
Let the cake cool completely before removing it from the pan.
