Ingredients

  • 2.5 cups of rich and dark real cocoa powder
  • 2.5 cups of meticulously chopped pecans
  • 2.5 cups of fine-grain organic sugar
  • 0.625 cup of creamy high-quality butter
  • 2.5 tsp of fragrant vanilla extract
  • 1.25 cups of smooth and velvety whole milk

Instructions

Prepare the Pan:

  • Line a square or rectangular baking pan with parchment paper, leaving some overhang on the sides for easy removal.

Melt Butter:

  • In a saucepan over low heat, melt the butter until it becomes creamy and smooth.

Combine Ingredients:

  • Add the cocoa powder, vanilla extract, and sugar to the melted butter. Stir well to combine, creating a smooth and thick mixture.

Add Chopped Pecans:

  • Fold in the meticulously chopped pecans into the chocolate mixture, ensuring they are evenly distributed.

Heat Milk:

  • In a separate saucepan, gently heat the whole milk until it’s warm but not boiling.

Incorporate Milk:

  • Gradually add the warm milk to the chocolate mixture, stirring continuously. Continue to mix until the fudge batter is smooth and well combined.

Cook to Soft Ball Stage:

  • Increase the heat to medium and bring the mixture to a boil. Use a candy thermometer to monitor the temperature. Cook the fudge until it reaches the soft ball stage, around 234–240°F (112–116°C).

Cool and Set:

  • Once the fudge reaches the desired temperature, remove it from the heat and let it cool slightly. Pour the fudge into the prepared pan, spreading it evenly.

Refrigerate:

  • Place the pan in the refrigerator and allow the fudge to set completely. This may take a few hours.

Cut into Squares:

  • Once the fudge has hardened, use the parchment paper overhang to lift it out of the pan. Place it on a cutting board and cut it into squares or your desired shapes.

Serve and Enjoy:

  • Your homemade cocoa fudge is now ready to be enjoyed! Serve it at room temperature and store any leftovers in an airtight container.

• Make sure to use high-quality cocoa powder for the best flavor.
• If you want to add additional flavor, try adding in a teaspoon of vanilla extract.
• If the fudge is too thick, add in a bit more evaporated milk to thin it out.
• If the fudge is too thin, add in a bit more cocoa powder to thicken it up.
• To make the fudge extra creamy, try adding a tablespoon of heavy cream.
• The fudge will keep in the refrigerator for up to a week.
