For the Slaw:
- 1/4 red cabbage core removed and thinly sliced
- 1/2 large carrot grated
- 1/4 green cabbage core removed and thinly sliced
- 1-1.5 tsp salt or according to the taste
For the Dressing:
- 1 tbsp granulated sugar according to taste or preference
- 1/4 tsp celery seed ground/powder
- 1/4 tsp pepper ground/powder
- 1/4 tsp onion ground/powder
- 1/8 tsp kosher salt
- 3/4 tbsp white wine vinegar
- 1/4 cup mayonnaise
- 1/2 tbsp lemon juice
Prepare Vegetables: Thinly slice the red cabbage and green cabbage, ensuring the core is removed. Grate the half-large carrot.
Combine: In a large mixing bowl, combine the sliced red cabbage, grated carrot, and sliced green cabbage.
Add Salt and Sugar: Sprinkle 1-1.5 teaspoons of salt over the vegetables, adjusting to taste. Add 0.75-1 tablespoon of granulated sugar, adjusting according to your preferred level of sweetness.
Mix the Seasonings: Incorporate celery seed, ground pepper, ground onion, and kosher salt to the vegetables. Toss the mixture to ensure even distribution of the seasonings.
Drizzle Vinegar: Drizzle 3/4 tablespoon of white wine vinegar over the slaw mixture. Mix well to combine and allow the vegetables to marinate in the flavors.
Make Dressing: In a small bowl, whisk together mayonnaise and lemon juice until well blended.
Combine: Pour the prepared dressing over the cabbage and carrot mixture. Toss the coleslaw thoroughly, ensuring every vegetable is coated with the dressing.
Marinate: Cover the bowl with plastic wrap and refrigerate the coleslaw for at least 1-2 hours, allowing the flavors to meld and the vegetables to marinate.
Serve: Once chilled, give the coleslaw a final toss before serving. Serve the Dole Coleslaw as a refreshing and crunchy side dish with your favorite meals.
