Ingredients

Cookies:

  • 1/2 cup of lusciously softened unsalted butter bringing a delightful creaminess to the mix

Ganache Filling:

  • 4 ounces of premium dark chocolate finely chopped for a luxurious and velvety ganache
  • 1/4 cup of indulgent heavy cream adding a luscious and smooth consistency to the filling
  • 1/2 tablespoon of unsalted butter contributing a rich and buttery undertone to the ganache

Instructions

  • Begin by preheating your oven to 350°F (175°C). Line a baking sheet with parchment paper and set aside.
  • In a mixing bowl, cream together the softened butter and sugar until light and fluffy.
  • Slowly add in the flour, cocoa powder, salt, and vanilla extract. Mix until well combined and a dough forms.
  • Roll the cookie dough into 12 equal-sized balls and place them on the prepared baking sheet. Use your thumb to create an indentation in the center of each cookie.
  • In a small saucepan, heat the heavy cream over medium heat until it just begins to simmer. Remove from heat and add in the chopped dark chocolate, stirring until smooth.
  • Spoon the ganache filling into each cookie indentation, making sure not to overfill.
  • Top each cookie with a few extra chocolate chips for an added crunch and indulgence.
  • Bake for 10 minutes, or until the edges are lightly golden. Allow to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
