Ingredients

  • 1 pound finely grated baby carrots
  • 2 cups all-purpose flour
  • 2 cups of granulated sugar
  • 4 large eggs
  • 2 teaspoons of baking soda
  • 1 1/4 cups oil
  • 1 1/2 teaspoon salt
  • 2 1/2 teaspoons cinnamon

For Cream

  • 8 oz packages of Cream Cheese at room temperature
  • 12 tablespoons room temperature unsalted butter
  • 8 cups powdered sugar sifted
  • 1 tablespoon of McCormick Vanilla Extract

Instructions

  • Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking pan and set aside.
  • In a medium mixing bowl, combine the grated carrots, flour, sugar, eggs, baking soda, oil, salt, and cinnamon. Mix until well combined.
  • Pour the batter into the prepared baking pan and smooth out the top with a spatula.
  • Bake for 50-55 minutes, or until a toothpick inserted in the center comes out clean.
  • Let the cake cool completely before frosting.
  • To make the cream cheese frosting, beat together cream cheese and butter until light and fluffy using an electric mixer.

Gradually add in the powdered sugar and vanilla extract, beating until smooth.

  • Once the cake is cooled, spread the cream cheese frosting over the top of the cake.
  • Optional: Top with chopped nuts or a sprinkle of cinnamon for garnish.
