Ingredients

  • 2 lb chicken tenderloins white tendon removed
  • 3 cups all-purpose flour
  • 4 cups buttermilk
  • 1 cup hot sauce
  • 1 cup cornstarch
  • 3 tsp salt or to taste
  • 2 tsp onion powder
  • 2 tsp paprika
  • 2 tsp oregano
  • 0.5 tsp black pepper or to taste
  • 4 tsp garlic powder
  • 1 cup honey
  • oil for frying

Instructions

  • In a large bowl, mix together the flour, cornstarch, and seasonings.
  • In a separate bowl, whisk together the buttermilk and hot sauce.
  • Dip each chicken tender into the flour mixture, then into the buttermilk mixture, and back into the flour mixture.
  • Heat oil in a large skillet over medium-high heat.
  • Carefully place the chicken tenders in the hot oil and fry until golden brown and crispy.
  • In a small saucepan, mix together honey and hot sauce over medium heat until well combined.
  • Remove the chicken tenders from the skillet and brush with the honey and hot sauce mixture.
  • Serve hot with your choice of sides.

Notes

  • To make the chicken tenders extra crispy, double dip them in the flour and buttermilk mixture.
  • For a spicier version, add more hot sauce to the honey mixture or sprinkle some cayenne pepper on top of the chicken tenders before serving.
  • Let the chicken rest for a few minutes after frying to allow the coating to set and become extra crispy.
  • If you don’t have buttermilk, you can make your own by mixing 1 cup of milk with 1 tablespoon of lemon juice or white vinegar. Let it sit for a few minutes before using in the recipe.
