For The Veggie Burger
- 2 15-ounce can drained and rinsed black beans
- 0.5 cup old fashioned oats
- 2.5 cup cooked brown rice
- 4 tablespoons finely chopped canned beets
- 2 teaspoon olive oil
- 0.5 cup chopped onion
- 2 minced clove garlic
- 1 teaspoon chili powder
- 2 teaspoon smoked paprika
- 2 teaspoon cumin
- Freshly ground black pepper to taste
- 2 teaspoon kosher salt
- 2 lightly beaten large egg
- 0.5 cup BBQ sauce
- 2 tablespoon molasses
- 2 tablespoon beet juice
For Serving
- 8 whole wheat 100 calorie hamburger buns or Gluten-free bun
- Optional toppings: Sliced pepper Jack cheese lettuce, tomato, avocado, BBQ sauce, ketchup
In a food processor, blend the black beans, oats, and brown rice until well combined.
Heat olive oil in a small skillet over medium heat. Add chopped onions and minced garlic, cooking until fragrant.
In a large bowl, mix together the blended bean mixture, cooked onion and garlic, beets, spices, salt and pepper, eggs and BBQ sauce until well combined.
Shape the mixture into 8 patties.
In a large flat skillet over medium-high heat, cook the patties for about 4-5 minutes on each side or until golden brown and heated through.
In a small bowl, mix together the BBQ sauce, molasses, and beet juice.
Serve the patties on whole wheat 100 calorie hamburger buns topped with BBQ sauce mixture and any additional toppings of your choice.
– If you don’t have black beans, you can substitute pinto beans or other beans instead.
– If you don’t have chili powder, you can substitute another type of chili such as ancho chili powder.
– If you don’t have smoked paprika, you can substitute regular paprika instead.
– To make the burgers more flavorful, add a tablespoon of Worcestershire sauce to the mixture before forming the patties.
– For a spicy version, add an additional teaspoon of cayenne pepper to the patty mixture.
– If you don’t have a skillet, you can also cook the burgers in the oven. Preheat the oven to 375°F and place the patties on a baking sheet. Bake for 10-15 minutes, flipping halfway through.
