Equipment

Ingredients

  • 8 Pounds beef roasted and grounded
  • 10 minced cloves of garlic
  • 64 Ounce stock
  • 3 teaspoon chili powder
  • 300 g white onion
  • 4 teaspoon dried oregano
  • Oil as you need
  • Salt
  • 300 g pepper
  • 4 teaspoon cumin
  • 2 tablespoon black pepper
  • Lime

Ingredients for the red sauce for enchilada:

  • 2 liter beef cooking liquid
  • Olive oil
  • 150 g chili powder
  • 2 Tablespoon brown sugar
  • 100 g smoked paprika
  • 2 Tablespoon apple cider vinegar
  • 900 g cans tomato sauce
  • 1/4 teaspoon salt

Ingredients for baking the enchilada:

  • 700 g grated pepper jack
  • 700 g medium-sharp grated cheddar
  • 24 corn tortillas

Instructions

  • Preheat your oven to 350°F (175°C).
  • In a cooking pan, add oil and sauté minced garlic over medium heat until fragrant.
  • Add the ground beef to the pan and cook until browned.
  • Stir in chili powder, chopped onion, dried oregano, salt, pepper, and cumin.
  • Cook until the onion is soft and the spices are fragrant.
  • Pour in stock and bring to a simmer.
  • Reduce heat to low and let it cook for 30 minutes.
  • While the beef is cooking, make the enchilada sauce by heating olive oil in a pressure cooker.
  • Add chili powder, brown sugar, smoked paprika, and apple cider vinegar to the pressure cooker and cook until fragrant.
  • Stir in tomato sauce and salt. Cook for 5 minutes.
  • Once the beef is cooked, remove it from heat and stir in a squeeze of lime juice.
  • To assemble the enchiladas, dip each corn tortilla into the enchilada sauce, then fill with beef mixture and roll tightly.
  • Place rolled enchiladas in a baking dish and top with the remaining enchilada sauce.
  • Sprinkle grated pepper jack cheese and cheddar over the top of the enchiladas.
  • Cover with foil and bake for 20 minutes.
  • Remove the foil and continue baking for an additional 15 minutes, or until the cheese is melted and bubbly.
