Ingredients

  • Water 6 cup
  • Jim Dandy Quick Grits 2 cup
  • Butter 2 tablespoon
  • Salt
  • Egg 4
  • Black pepper

Instructions

  • Bring the water to a boil in a large pot over high heat.
  • Once boiling, add the Jim Dandy Quick Grits and stir for two minutes.
  • Reduce the heat to medium-low and cook for fifteen minutes, stirring occasionally.
  • Add butter and salt (to taste) and stir until the butter is melted.
  • In a separate bowl, beat together eggs until light and fluffy.
  • Slowly add the egg mixture to the grits and stir until combined.
  • Turn off the heat and let sit for five minutes before serving.
  • Serve with freshly ground black pepper and additional butter, if desired.

Notes

– To make the grits extra creamy, you can add a few tablespoons of heavy cream or half-and-half at the end.
 
– For a vegan version of the dish, use vegetable broth and omit the butter and Parmesan cheese. 
– To add some extra flavor, you can stir in some freshly chopped herbs such as parsley, basil, or chives at the end. 
– To add some spice, you can stir in a pinch of red pepper flakes or a few teaspoons of your favorite hot sauce. 
– To make it a heartier meal, add cooked, crumbled sausage or bacon to the finished grits.
