For the Graham cracker crust
- 1 cup Melted butter
- 4 cups crushed Graham cracker crumbs
- 2 teaspoon Cinnamon
- 1/2 cup Granulated sugar
For the key lime filling
- 6 large eggs separated
- 2 tbsp Lemon juice
- 2 oz can Sweetened condensed milk
- 4 tbsp Sugar
- 1 cup Key lime juice
- 4 tsp lime zest grated lime peel
For the whipped topping
- 4 cups Heavy whipping cream
- 1 tsp Vanilla extract
- 4 tbsp Powdered sugar
Preheat your oven to 350°F (175°C).
In a mixing bowl, combine melted butter, graham cracker crumbs, cinnamon, and granulated sugar. Mix until well combined.
Press the mixture into a 9-inch pie dish, making sure to press it evenly along the bottom and up the sides of the dish.
Bake the crust for 10-12 minutes or until golden brown.
In another mixing bowl, beat egg yolks until they become pale yellow in color.
Add in lemon juice, sweetened condensed milk, sugar, key lime juice and lime zest. Mix until well combined.
In a separate mixing bowl, beat egg whites until stiff peaks form.
Gently fold the beaten egg whites into the mixture with a spatula.
Pour the filling into the prepared crust and smooth out the top with a spatula.
Bake for 15-18 minutes or until the filling is set.
Let the pie cool completely before refrigerating for at least 2 hours.
In a mixing bowl, beat heavy whipping cream, vanilla extract, and powdered sugar until stiff peaks form.
Spread the whipped topping over the cooled pie.
