Equipment

  • Heavy-bottomed pot

Ingredients

  • 64 oz fresh Tomatoes
  • 4 lb Shrimp
  • 1 cup Onions
  • 1 cup Butter
  • 8 tbsp All-purpose flour
  • 16 Garlic Cloves
  • 1 and 1/2 cups Bell Pepper
  • 1/4 tbsp Cayenne Pepper
  • 2 tbsp Worcestershire Sauce
  • 10 tbsp Creole Seasonings
  • 2 tbsp Hot Sauce
  • 2 tbsp Brown Sugar
  • 1/2 cup Italian Parsley
  • 2/3 cup White Rice

Instructions

Prepare Ingredients:

  • Chop onions, bell peppers, and Italian parsley.
  • Mince garlic cloves.
  • Peel and devein the shrimp.

Make Creole Seasonings:

  • Combine Cayenne Pepper and Creole Seasonings in a small bowl. Set aside.

Prepare Tomatoes:

  • Dice fresh tomatoes.

Make Roux:

  • In a large, heavy-bottomed pot, melt 1 cup of butter over medium heat.
  • Gradually whisk in the all-purpose flour to create a roux. Cook, stirring constantly, until the roux is a deep golden brown.

Sauté Vegetables:

  • Add chopped onions, minced garlic, and bell peppers to the roux. Cook until vegetables are softened.

Add Creole Seasonings:

  • Stir in the prepared Creole Seasonings and continue to cook for a few minutes, allowing the flavors to meld.

Add Tomatoes:

  • Add the diced fresh tomatoes to the pot. Stir well and let the mixture simmer until the tomatoes break down and the flavors blend.

Season the Étouffée:

  • Add Worcestershire sauce, hot sauce, and brown sugar. Adjust seasoning to taste.

Cook Shrimp:

  • Add the peeled and deveined shrimp to the pot. Cook until the shrimp turn pink and opaque, indicating they are fully cooked.

Serve:

  • Serve the Shrimp Étouffée over cooked white rice.

Garnish:

  • Sprinkle chopped Italian parsley over the dish for freshness and color.

Notes

• For a spicier dish, add more cayenne pepper.
• For a more flavorful dish, use a Cajun seasoning blend that includes garlic, onion, and other herbs.
• For a healthier dish, use light cream instead of heavy cream.
• To help thicken the sauce, whisk in a tablespoon of cornstarch.
• For a richer dish, add a tablespoon of butter at the end.
• To save time, cook the vegetables in the microwave before adding them to the skillet.
