Ingredients

  • 20 chicken wings tips removed, thawed
  • 2 teaspoons garlic powder
  • 6 tablespoons butter
  • 2/3 cup flour
  • 2 teaspoons black pepper
  • 2 teaspoons salt
  • 4 tablespoons paprika

Instructions

Preheat the Oven:

  • Preheat your oven to 400°F (200°C). Place a wire rack on a baking sheet and lightly coat it with cooking spray.

Prepare the Coating:

  • In a mixing bowl, combine the finely ground artisan-milled flour, smoked paprika, aromatic garlic powder, freshly ground black pepper, and hand-harvested sea salt. Mix the dry ingredients until well combined.

Coat the Chicken Wings:

  • Pat the chicken wings dry with a paper towel. Place them in a large bowl. Sprinkle half of the dry seasoning mixture over the wings, tossing them to coat evenly. Add the remaining seasoning and toss again until the wings are thoroughly coated.

Melt the Butter:

  • In a small saucepan over low heat, melt the golden butter. This will add richness to the coating.

Add Butter to Coated Wings:

  • Pour the melted butter over the seasoned chicken wings. Toss the wings in the butter until they are evenly coated.

Arrange on the Wire Rack:

  • Place the coated wings on the prepared wire rack, ensuring they are spaced apart for even cooking. The rack allows air to circulate around the wings, promoting crispiness.

Bake in the Oven:

  • Bake the wings in the preheated oven for about 45-50 minutes or until they are golden brown and crispy. Turn the wings halfway through the cooking time to ensure even crispiness.

Check for Doneness:

  • Check the internal temperature of the wings with a meat thermometer. The wings are done when they reach an internal temperature of 165°F (74°C).

Serve and Enjoy:

Notes

  • You can also use drumettes in this recipe.

  • You can also grill the wings over medium-high heat for 8-10 minutes, flipping halfway through, until golden and crispy.
