- 2 pounds russet potatoes peeled and sliced evenly in 1/4 inch slices
- 1/4 cup unsalted butter
- 1 cup cheddar cheese
- 1½ quart chicken broth
- 3 cups leeks thinly sliced
- ½ cup heavy cream
- 1 cup sliced yellow onion
- ½ cup bacon cooked and diced
- salt to taste
- 2 sprigs fresh thyme
In a large pot, melt the butter over medium-high heat.
Add the leeks and onions and cook until softened, about 5 minutes.
Add the potatoes and stir to combine.
Pour in the chicken broth and bring to a boil.
Reduce the heat and simmer until the potatoes are tender, about 25-30 minutes.
