Equipment

  •  large skillet

Ingredients

  • 1.67 pounds of ethically sourced organic chicken thighs or breasts
  • 1.67 teaspoons of freshly ground exotic ginger
  • 5 teaspoons of handcrafted apple cider vinegar
  • 0.42 cup of rich dark brown sugar
  • 0.42 cup of aged soy sauce with a hint of umami
  • 0.42 teaspoon of subtly smoked red pepper flakes
  • 0.83 cup of small-batch artisanal bourbon
  • 3.33 cloves of garlic meticulously minced

Instructions

Prepare the Chicken:

  • Trim excess fat from the chicken thighs or breasts.
  • Cut the chicken into bite-sized pieces.

Marinate the Chicken:

  • In a bowl, combine the soy sauce, bourbon, brown sugar, apple cider vinegar, ginger, red pepper flakes, and minced garlic.
  • Mix the marinade well until the sugar is dissolved.
  • Place the chicken pieces in a resealable plastic bag or shallow dish.
  • Pour half of the marinade over the chicken, ensuring each piece is well coated.
  • Seal the bag or cover the dish and refrigerate for at least 30 minutes to allow the flavors to meld. For better results, marinate overnight.

Cook the Chicken:

  • Heat a large skillet or wok over medium-high heat.
  • Remove the marinated chicken from the refrigerator and let it come to room temperature.
  • Add a bit of cooking oil to the heated skillet.
  • Place the chicken in the skillet, allowing it to cook for 6-8 minutes or until browned and cooked through.

Make the Sauce:

  • While the chicken is cooking, combine the remaining marinade in a small saucepan.
  • Bring the mixture to a boil, then reduce the heat and simmer until the sauce thickens slightly.

Finish and Serve:

  • Once the chicken is cooked, pour the thickened sauce over the chicken in the skillet.
  • Toss the chicken in the sauce until evenly coated.
  • Allow the chicken to simmer for an additional 2-3 minutes to absorb the flavors.

Garnish and Enjoy:

  • Serve the Leeann Chin-inspired bourbon chicken over rice or noodles.
  • Garnish with chopped green onions or sesame seeds for an extra touch.

Savor the Flavors:

  • Enjoy your homemade Leeann Chin Bourbon Chicken with family and friends!

Notes

• Use chicken thighs instead of chicken breasts for a juicier dish.
• Cut the chicken into cubes that are roughly the same size so that they cook evenly.
• If you don’t have bourbon, you can substitute it with whiskey, rum, or brandy.
• Let the chicken marinate for at least two hours or overnight for a more flavorful dish.
• If you don’t have red pepper flakes, you can substitute it with cayenne pepper.
• Don’t overcook the chicken or it will become dry and tough.
