Equipment

  • pasta pot
  • Frying pan

Ingredients

  • 16 oz measured dry spaghetti
  • 16 slices chopped bacon center cut
  • 4 eggs
  • 1 cup parmesan cheese
  • kosher salt and pepper as per taste

Instructions

  • Cook the spaghetti according to package instructions until al dente.
  • In a frying pan, cook the chopped pancetta for about 5 minutes, or until crispy. Remove from heat and set aside.
  • In a separate bowl, mix together the eggs, Parmesan cheese, and salt and pepper.
  • Drain the cooked spaghetti and add it to the pan with the cooked pancetta. Place the pan over low heat.
  • Pour in the egg mixture and stir continuously until the sauce thickens, about 2-3 minutes.
  • Serve hot and garnish with extra Parmesan cheese and fresh herbs if desired.

Notes

– Use a good quality smoked pancetta for the best flavor.
– If you don’t have fresh herbs, you can use dried herbs instead.
– Don’t overcook the pasta or it will be mushy.
– For a creamier dish, add an extra egg.
– For a spicier dish, add a pinch of red pepper flakes.
– For a richer dish, add a splash of cream.
