Carbonara is one of the most beloved Italian dishes in the world. It’s a simple dish featuring pasta, eggs, and cheese, all cooked together in a creamy sauce.
Cook the spaghetti according to package instructions until al dente.
In a frying pan, cook the chopped pancetta for about 5 minutes, or until crispy. Remove from heat and set aside.
In a separate bowl, mix together the eggs, Parmesan cheese, and salt and pepper.
Drain the cooked spaghetti and add it to the pan with the cooked pancetta. Place the pan over low heat.
Pour in the egg mixture and stir continuously until the sauce thickens, about 2-3 minutes.
Serve hot and garnish with extra Parmesan cheese and fresh herbs if desired.
Notes
– Use a good quality smoked pancetta for the best flavor.– If you don’t have fresh herbs, you can use dried herbs instead.– Don’t overcook the pasta or it will be mushy.– For a creamier dish, add an extra egg.– For a spicier dish, add a pinch of red pepper flakes.– For a richer dish, add a splash of cream.
