  • In a large bowl, tear the brioche or white bread into small pieces.
  • In a separate bowl, mash the ripe bananas until smooth.
  • In another bowl, whisk together the evaporated milk, egg yolks, eggs, and nutmeg gush.
  • Slowly pour this mixture over the torn bread, making sure all the pieces are evenly coated.
  • Add in the mashed bananas and mix until well combined.
  • Pour the warm milk over the mixture and let it soak for about 10 minutes.
  • Grease a baking dish with butter or cooking spray and pour the bread pudding mixture into it.
  • Cover the dish with aluminum foil paper and bake for 30 minutes.
  • After 30 minutes, remove the foil and bake for an additional 10-15 minutes until the top is golden brown.
  • Remove from the oven and let it cool for a few minutes before serving.
  • Serve warm with a sprinkle of cinnamon or a scoop of vanilla ice cream on top if desired.

Notes

  • Make sure to use ripe bananas for the best flavor.
  • If you do not have brioche or white bread, you can also use challah, French bread, or any other type of soft bread.
  • Feel free to add in some chopped nuts such as walnuts or pecans for added texture and flavor.
  • For a more intense moonshine flavor, add in a splash of moonshine to the custard mixture before pouring it over the bread.
  • Serve the pudding with a dusting of powdered sugar for an extra touch of sweetness.
  • For a boozy twist, soak the bread in moonshine instead of warm milk before baking. However, this is not recommended for children or those avoiding alcohol.
