Ingredients

  • 1 cup Unsalted butter softened
  • 1 tsp Vanilla
  • 1 1/4 cups All-purpose flour

  • 3 cups Old-fashioned Quaker oats
  • 3/4 cup Brown sugar
  • 2 Eggs
  • 1 tsp Baking soda
  • 1 2/3 cups Butterscotch morsels
  • 3/4 cup Granulated sugar

Instructions

Step 1:

  • Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

Step 2:

  • In a medium bowl, whisk together the all-purpose flour, baking soda, salt, and cinnamon until well combined.

Step 3:

  • In a separate large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.

Step 4:

  • Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.

Step 5:

  • Gradually add the dry flour mixture to the wet ingredients, mixing until just combined.

Step 6:

  • Fold in the old-fashioned Quaker oats and butterscotch morsels until evenly distributed throughout the cookie dough.

Step 7:

  • Using a cookie scoop or spoon, drop rounded dough mounds onto the prepared baking sheet, spacing them slightly apart.

Step 8:

  • Bake in the preheated oven for 9-11 minutes, or until the edges are golden brown and the tops are set.

Step 9:
