Ingredients

  • 12 ounce Vermicelli Noodles
  • 4 pound chicken legs or thighs
  • 24 cups Chicken Broth
  • 16 stalks green onions
  • 20 inch piece of ginger

Instructions

  • Begin by boiling the chicken in the chicken broth for about 10-12 minutes or until fully cooked.
  • Remove the chicken from the broth and let it cool before shredding it with a fork.
  • In a separate saucepan, cook the vermicelli noodles according to package instructions.
  • Once cooked, drain the noodles and set them aside.
  • In a large saucepan, heat the chicken broth over medium-high heat.
  • Add the shredded chicken to the broth and let it simmer for a few minutes.
  • Add the cooked vermicelli noodles to the broth and stir well.
  • Chop the green onions and ginger into small pieces and add them on top of the noodle mixture.
  • Let everything simmer for an additional 2-3 minutes, allowing the flavors to meld together.
